Vegan Banana Spice Cake

1.Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

2.In a large mixing bowl, mash the ripe bananas thoroughly until smooth.

3.Add the vegetable oil, brown sugar, and vanilla extract to the mashed bananas. Mix well until combined.

4.In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, and ground cloves (if using).

5.Gradually add the dry ingredients to the wet banana mixture, alternating with the almond milk. Start and end with the dry ingredients. Stir gently until just combined; do not overmix to keep the cake tender.

6.Pour the batter into the prepared cake pan and smooth the top with a spatula.

7.Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.

8.Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

9.Once cooled, slice and serve as is or with a dusting of powdered sugar or a vegan glaze if desired.
