Rich Chocolate Layer Cake

1.Preheat your oven to 350°F (175°C). Grease and flour two 9-inch (23 cm) round cake pans, then line the bottoms with parchment paper for easy removal.

2.In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to combine evenly.

3.In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until smooth and well combined.

4.Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until just combined. Avoid overmixing to keep the cake tender.

5.Carefully stir in the boiling water. The batter will be thin; this is normal and helps create a moist cake.

6.Divide the batter evenly between the prepared pans. Tap the pans gently on the counter to release any air bubbles.

7.Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.

8.Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, run a knife around the edges and invert the cakes onto wire racks to cool completely.

9.While the cakes cool, prepare the chocolate ganache. Place the chopped chocolate in a heatproof bowl.

10.Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not boil.

11.Pour the hot cream over the chopped chocolate and let it sit for 2-3 minutes to melt the chocolate.

12.Gently stir the mixture until smooth and glossy. Add the softened butter and a pinch of salt, stirring until fully incorporated and silky.

13.Once the cakes are completely cool, place one cake layer on a serving plate. Spread a generous layer of ganache evenly over the top.

14.Place the second cake layer on top and cover the entire cake with the remaining ganache, using an offset spatula to create a smooth finish.

15.For best results, refrigerate the cake for at least 1 hour before serving to allow the ganache to set and the flavors to meld.

16.Serve at room temperature. Optionally, garnish with fresh berries or chocolate shavings for an elegant touch.
