Creamy Pork Chop Stew with Vegetables

1.Heat olive oil in a skillet over medium-high heat.

2.Season pork chops on both sides with salt, pepper, and dried thyme.

3.Sear pork chops in the hot skillet for 3-4 minutes per side until golden brown. Remove and set aside.

4.In the same skillet, add chopped onion and sauté for 3 minutes until translucent.

5.Add minced garlic and cook for 1 minute until fragrant.

6.In the crockpot, combine cream of mushroom soup, chicken broth, sautéed onion and garlic, and frozen California mixed vegetables. Stir well to combine.

7.Place the seared pork chops on top of the vegetable and soup mixture in the crockpot.

8.Cover and cook on low for 6-7 hours or on high for 3-4 hours, until pork chops are tender and cooked through.

9.About 30 minutes before serving, stir in the heavy cream to the crockpot mixture to create a rich, creamy sauce.

10.Adjust seasoning with additional salt and pepper if needed.

11.Serve the creamy pork chop stew hot, garnished with freshly chopped parsley.
