Peach & Mint Summer Fizz

1.In a large pitcher, combine the sliced peaches, mint leaves, and granulated sugar. Muddle gently with a wooden spoon or muddler until the peaches release their juices and the mint is fragrant.

2.Fill the pitcher halfway with ice cubes to chill the mixture.

3.Pour the chilled sparkling wine over the muddled peach-mint mixture, then add the club soda. Stir gently to combine, being careful not to lose too much carbonation.

4.Taste and adjust sweetness if desired by adding a bit more sugar and stirring until dissolved.

5.Garnish the pitcher with extra mint leaves and a few peach slices. Serve immediately in glasses filled with ice, ensuring each serving gets some peach and mint.
