Classic Oreo Crepes

1.In a large mixing bowl, whisk together the flour, eggs, milk, water, granulated sugar, and salt until the batter is smooth and free of lumps.

2.Stir in the melted butter until fully incorporated. Let the batter rest at room temperature for 15 minutes to relax the gluten and improve texture.

3.While the batter rests, prepare the whipped cream: In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer on medium-high speed until stiff peaks form. Set aside.

4.Heat a non-stick skillet or crepe pan over medium heat and lightly brush with melted butter.

5.Pour about 1/4 cup of batter into the center of the pan, immediately swirling the pan to spread the batter evenly into a thin circle.

6.Cook the crepe for about 1 to 2 minutes until the edges begin to lift and the bottom is lightly golden. Carefully flip the crepe using a spatula and cook for an additional 30 seconds to 1 minute on the other side.

7.Transfer the cooked crepe to a plate and cover loosely with foil to keep warm. Repeat the process with the remaining batter, brushing the pan with butter as needed.

8.Once all crepes are cooked, spread a thin layer of whipped cream over each crepe, then sprinkle a generous amount of crushed Oreo cookies on top of the whipped cream.

9.Fold the crepes into quarters or roll them up, then optionally garnish with additional crushed Oreos or a dusting of powdered sugar before serving.
