Creamy Mushroom Penne with Spicy Pepper Sauce

1.Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain and set aside, reserving 1/2 cup of pasta water.

2.While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent and soft, about 4-5 minutes.

3.Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until they release their moisture and turn golden brown, about 7-8 minutes.

4.Stir in the dried oregano leaves and cook for another minute to release their aroma.

5.Pour in the spicy pepper pasta sauce and mix well with the mushrooms and onions. Let it simmer for 3-4 minutes to blend the flavors.

6.Reduce the heat to low and slowly add the heavy cream, stirring continuously to create a smooth, creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

7.Season the sauce with salt and freshly ground black pepper to taste.

8.Add the cooked penne pasta to the skillet and toss gently to coat the pasta evenly with the creamy spicy mushroom sauce. Cook for an additional 2 minutes to allow the flavors to meld.

9.Remove from heat and sprinkle the grated Parmesan cheese over the pasta. Toss lightly to combine and allow the cheese to melt slightly.

10.Serve the creamy mushroom penne hot, garnished with chopped fresh parsley if desired, and additional Parmesan cheese on the side.
