Classic Italian Lasagna Rolls

1.Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with olive oil.

2.Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay the noodles flat on a clean kitchen towel to cool slightly.

3.In a large mixing bowl, combine the ricotta cheese, 1 cup mozzarella, Parmesan, egg, parsley, Italian seasoning, garlic powder, salt, and black pepper. Mix until smooth and well combined.

4.Spread 1 cup of marinara sauce evenly over the bottom of the prepared baking dish.

5.Lay out each lasagna noodle and spread about 3 tablespoons of the ricotta mixture evenly over each noodle, leaving a small border at each end.

6.Gently roll up each noodle from one short end to the other, keeping the filling inside. Place each roll seam-side down in the baking dish.

7.Pour the remaining marinara sauce evenly over the lasagna rolls. Sprinkle the remaining 1/2 cup mozzarella and extra Parmesan on top.

8.Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

9.Let the lasagna rolls rest for 5-10 minutes before serving. Garnish with extra chopped parsley and a sprinkle of Parmesan if desired.
