Cheesy Ham Tater Tot Casserole

1.Preheat your oven to 375°F (190°C).

2.In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes. Remove from heat and set aside.

3.In a large mixing bowl, combine the cream of mushroom soup, sour cream, milk, sautéed onion and garlic, salt, black pepper, and smoked paprika (if using). Stir until smooth and well combined.

4.Add the diced ham and 1 1/2 cups of shredded cheddar cheese to the mixture. Stir gently to distribute evenly.

5.Lightly grease a 9x13-inch baking dish. Spread the ham and cheese mixture evenly into the dish.

6.Arrange the frozen tater tots in a single layer over the ham mixture, covering the entire surface.

7.Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the tater tots.

8.Place the casserole in the preheated oven and bake uncovered for 40-45 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbling around the edges.

9.Remove from the oven and let it rest for 5 minutes before serving.

10.Garnish with chopped fresh parsley for a pop of color and freshness. Serve warm.
