Homemade Pumpkin Pie

1.Preheat your oven to 200°C (400°F).

2.In a large bowl, whisk together the pumpkin puree, heavy cream, granulated sugar, brown sugar, eggs, cinnamon, ginger, nutmeg, cloves, and salt until smooth and well combined.

3.Pour the pumpkin filling into a chilled pie crust.

4.Bake for 15 minutes at 200°C (400°F).

5.Reduce the oven temperature to 175°C (350°F) and continue to bake for an additional 35-45 minutes, or until the edges are set and the center jiggles only slightly when gently shaken. A knife inserted near the center should come out clean.

6.Remove the pie from the oven and let it cool completely on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to fully set.
