Lemon-Garlic Steak with Sautéed Spinach

1.In a bowl or a resealable plastic bag, combine 1/4 cup olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the steak and turn to coat. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.

2.When ready to cook, remove the steak from the marinade, letting any excess drip off. Discard the marinade.

3.Heat a grill pan or a heavy-bottomed skillet over medium-high heat. Add the steak and cook for 4-6 minutes per side for medium-rare, or to your desired doneness. Let the steak rest on a cutting board for 5-10 minutes before slicing.

4.While the steak is resting, prepare the spinach. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced garlic and cook until fragrant, about 30 seconds, being careful not to burn it.

5.Add the spinach to the skillet in batches, if necessary. Cook, tossing frequently, until the spinach is wilted, about 2-4 minutes.

6.Season the spinach with salt and pepper to taste. Remove from heat.

7.Slice the rested steak against the grain. Serve the steak alongside the sautéed spinach. Garnish with optional lemon wedges.
