Crispy Roasted Chickpea and Feta Bites

1.Preheat your oven to 200°C.

2.In a mixing bowl, toss the dried chickpeas with 2 tablespoons of olive oil, the za'atar seasoning, and the smoked paprika until evenly coated.

3.Spread the seasoned chickpeas in a single layer on a parchment-lined baking sheet.

4.Roast the chickpeas for 20 minutes, or until they become crispy and golden brown.

5.Remove the sheet from the oven and while the chickpeas are still hot, sprinkle the crumbled feta cheese and the remaining tablespoon of olive oil over the top.

6.Return to the oven for 3-5 minutes until the feta is warm and slightly softened but not fully melted.

7.Garnish with fresh parsley before serving warm as bite-sized snacks.
