Homemade Worcestershire Sauce

Making the Sauce In a medium saucepan, combine apple cider vinegar, soy sauce, brown sugar, molasses, tamarind paste, fish sauce, garlic powder, onion powder, black pepper, ground mustard, cloves, cinnamon, paprika, cayenne pepper, and salt. Heat over medium heat until the mixture comes to a simmer.

Simmering the Sauce Reduce the heat to low and let the sauce simmer for 20 minutes, stirring occasionally.

Cooling the Sauce Remove the sauce from heat and let it cool slightly.

Blending the Sauce Transfer the sauce to a blender and blend until smooth.

Adding Additional Flavorings Add the anchovy paste, dried thyme, dried oregano, dried basil, dried parsley, and grated lemon zest to the blender. Blend again until all the ingredients are well combined.

Storing the Sauce Pour the Worcestershire sauce into a bottle or jar and store in the refrigerator. The sauce will continue to develop its flavor over time.
