Roast Sucking Pig

Marinade In a bowl, combine soy sauce, vinegar, brown sugar, oyster sauce, fish sauce, minced garlic, grated ginger, black pepper, paprika, and salt. Mix well until the sugar is dissolved.

Marinating the Pig Place the sucking pig in a large roasting pan, and pour the marinade all over the pig. Make sure to rub the marinade inside the pig's cavity as well. Cover the pan with plastic wrap and refrigerate for at least 24 hours, turning the pig occasionally to ensure even marination.

Preheating the Oven Preheat the oven to 325°F (165°C). Remove the pig from the marinade and discard the excess marinade. Pat dry the pig with paper towels.

Preparing the Stuffing In a large skillet, heat the olive oil and butter over medium-high heat. Add the onions, celery, and carrots, and cook until softened. Stir in the garlic, dried thyme, dried rosemary, and dried sage. Cook for another 2 minutes.

Assembling the Stuffing Transfer the cooked vegetables to a large mixing bowl. Add the cooked white rice, diced apples, raisins, chopped walnuts, chopped fresh parsley, salt, and pepper. Mix well to combine.

Stuffing the Pig Stuff the pig's cavity with the prepared stuffing. Use kitchen twine to tie the legs together and secure the stuffing inside. Place the pig on a rack in a roasting pan.

Adding Liquid to the Pan Pour the chicken broth and white wine into the bottom of the roasting pan. This will help keep the pig moist during roasting.

Roasting the Pig Roast the pig in the preheated oven for about 4-5 hours, or until the internal temperature reaches 160°F (71°C) in the thickest part of the meat. Baste the pig with the drippings from the pan every hour.

Crisping the Skin After the pig is roasted, increase the oven temperature to 500°F (260°C). This will help crisp up the skin. Return the pig to the oven and roast for an additional 20-30 minutes, or until the skin is crispy and golden brown.

Carving and Serving Remove the pig from the oven and let it rest for at least 30 minutes before carving. Serve the roast sucking pig with your favorite side dishes and enjoy!
