Stuffed Potato with Chicken and Cheese

Preparation Preheat the oven to 200°C (392°F).

2.Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake in the preheated oven for about 40-45 minutes or until tender.

3.Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.

Potato Stuffing In a bowl, mash the potato flesh with a fork. Add the chopped onion, minced garlic, cooked chicken, chopped crab sticks, grated mozzarella cheese, salt, and pepper. Mix well to combine.

5.Fill each potato shell with the potato stuffing mixture.

Topping Spread a thin layer of mayonnaise over the stuffed potatoes. Top with corn kernels, grated carrot, and sliced olives.

7.Place the stuffed potatoes on a baking sheet and bake in the preheated oven for 15-20 minutes or until the topping is golden and the cheese is melted.

8.Serve hot as a main dish or as a side dish.
