Hearty Beef and Vegetable Stew

Preparation 1. In a large pot, heat some oil over medium heat. 2. Add the chopped onions and minced garlic, and sauté until the onions are translucent.

Cooking the Meat 3. Increase the heat to high and add the cubed beef to the pot. 4. Cook until the beef is browned on all sides.

Adding Vegetables 5. Stir in the diced potatoes, sliced carrots, and diced beetroot. 6. Pour in the beef broth and add the tomato paste, salt, black pepper, paprika, thyme, and bay leaf.

Simmering 7. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 hours, stirring occasionally.

Finishing 8. Add the chopped cabbage to the stew and simmer for an additional 15 minutes, or until the cabbage is tender. 9. Season with additional salt and pepper to taste before serving.
