Tiramisu Cake

Preparation of the Cake Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.

Making the Cake In a large bowl, beat the eggs and granulated sugar together until light and fluffy. Add the vanilla extract and mix well. In a separate bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until fully combined. Divide the batter evenly between the prepared cake pans and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.

Preparing the Coffee Soaking Syrup In a small bowl, combine the brewed coffee and coffee liqueur. Stir until well combined.

Whipping the Mascarpone Filling In a mixing bowl, beat the mascarpone cheese and confectioners' sugar until smooth and creamy. Add the heavy cream and vanilla extract. Continue to beat until the mixture is thick and fluffy.

Assembling the Tiramisu Cake One at a time, quickly dip half of the ladyfinger cookies into the coffee soaking syrup and arrange them in a single layer in the bottom of a 9-inch springform pan. Spread half of the mascarpone filling over the ladyfingers. Repeat with the remaining ladyfingers and mascarpone filling. Cover and refrigerate the cake for at least 4 hours or overnight.

6.Before serving, dust the top of the cake with unsweetened cocoa powder and sprinkle chocolate shavings on top. Serve chilled and enjoy!
