Slow Cooker Chicken Cacciatore

Preparation of Chicken Season the chicken thighs with salt, pepper, dried oregano, and dried basil.

Browning the Chicken Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs on both sides, about 3 minutes per side. Transfer to the slow cooker.

Sautéing the Vegetables In the same skillet, sauté the onion, bell peppers, and garlic until softened, about 4-5 minutes. Transfer to the slow cooker.

Preparing the Sauce Add crushed tomatoes, chicken broth, red wine, tomato paste, sugar, and bay leaf to the slow cooker. Stir to combine.

Slow Cooking the Dish Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the flavors have melded together.

Serving the Dish Before serving, remove the bay leaf and stir in chopped parsley. Serve the chicken cacciatore over cooked pasta or with crusty bread. Sprinkle with grated Parmesan cheese if desired.
