Blackberries Confit

1.In a saucepan, combine the blackberries, granulated sugar, lemon juice, and lemon zest.

2.Heat the mixture over medium heat until the sugar has dissolved, stirring occasionally.

3.Once the sugar has dissolved, reduce the heat to low and simmer the mixture for about 20-25 minutes until the blackberries have softened and the mixture has thickened, stirring occasionally.

4.Remove the saucepan from heat and let the blackberry confit cool slightly before serving.

5.Transfer the blackberry confit to a jar or airtight container and store in the refrigerator.

6.Serve the blackberry confit over ice cream, yogurt, pancakes, or enjoy it on its own as a sweet treat.
