Eid Rice: Fragrant Rice with Spiced Meat and Nuts

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

2.In a large skillet, heat ghee over medium heat. Add cumin seeds and sauté until fragrant.

3.Add the chopped onions and cook until translucent. Stir in the ginger-garlic paste, cinnamon, cardamom, and turmeric.

4.Add the cubed lamb and brown on all sides. Pour in the chicken broth and simmer until the meat is tender, about 20 minutes.

5.In a separate pan, toast the mixed nuts until lightly golden. Add the nuts and raisins to the meat mixture.

6.Stir in the soaked rice, ensuring it's well coated with the meat and spice mixture. Add the yogurt and mix gently.

7.Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the rice is cooked through and all liquid is absorbed.

8.Garnish with fresh cilantro and mint before serving. Eid rice is ready to be enjoyed!
