Christmas Stew

1.In a large pot, heat olive oil over medium heat.

2.Add the beef stew meat and brown on all sides.

3.Add the chopped onion and minced garlic, sauté until fragrant.

4.Stir in the carrots and potatoes, cook for a few minutes.

5.Pour in the beef broth and red wine, bring to a simmer.

6.Add the diced tomatoes, thyme, rosemary, paprika, salt, and pepper.

7.Cover and let the stew simmer on low heat for 1.5 to 2 hours, stirring occasionally.

8.Taste and adjust seasoning if needed.

9.Serve the Christmas Stew hot, garnished with fresh parsley.
