Sweet and Spicy Habanero Grilled Onion Sauce

1.Preheat your grill to medium-high heat.

2.Peel the onions and cut them into thick slices, about 1/2 inch thick.

3.Brush the onion slices with olive oil and season with salt and black pepper.

4.Place the onion slices on the grill and cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.

5.While the onions are grilling, remove the stems from the habanero peppers and cut them in half. Be sure to wear gloves to avoid contact with the seeds and oils.

6.In a medium saucepan, combine the grilled onions, habanero peppers, honey, apple cider vinegar, and water.

7.Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 15 minutes, until the onions and peppers are very soft.

8.Remove the saucepan from the heat and let the mixture cool slightly.

9.Transfer the mixture to a blender and blend until smooth. Be careful when blending hot liquids.

10.Taste the sauce and adjust the seasoning with more salt or honey if needed.

11.Pour the sauce into a clean jar or bottle and let it cool completely before storing in the refrigerator.
