Cinnamon Peanut Butter Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3.Add the peanut butter, vanilla extract, and egg to the mixture, and beat until well combined.

4.In a separate bowl, whisk together the flour, ground cinnamon, baking soda, and salt.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6.Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.

7.Flatten each cookie slightly with the back of a fork, creating a crisscross pattern on top.

8.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

9.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
