Savory Egg Noodle Wraps

1.In a mixing bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste.

2.Heat a non-stick skillet over medium heat and add a little oil to coat the bottom.

3.Pour a portion of the egg mixture into the skillet, swirling it around to create a thin layer. Cook for about 1-2 minutes until the edges start to set.

4.Using a spatula, gently lift the edges of the egg wrap and flip it over. Cook for another minute until fully set. Remove from the skillet and set aside. Repeat with the remaining egg mixture to make additional wraps.

5.In a separate bowl, combine the cooked noodles, chopped vegetables, soy sauce, sesame oil, garlic powder, and ginger powder. Mix well to ensure the noodles are evenly coated.

6.Take one egg wrap and place a portion of the noodle mixture in the center. Fold the sides of the wrap over the filling and roll it up tightly to enclose the noodles.

7.Repeat the process with the remaining egg wraps and noodle filling.

8.Serve the savory egg noodle wraps warm, garnished with fresh cilantro if desired.
