Elven Leaf-Wrapped Herb and Mushroom Delight

1.Rinse the wild rice under cold water and drain.

2.In a large pot, bring the vegetable broth to a boil. Add the wild rice, reduce the heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the liquid is absorbed.

3.While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

4.Add the minced garlic and chopped mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms are tender and browned.

5.Stir in the chopped spinach, parsley, thyme, rosemary, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted. Remove from heat.

6.Once the rice is cooked, fluff it with a fork and combine it with the mushroom and herb mixture. If desired, stir in the grated Parmesan cheese for added flavor.

7.Preheat your oven to 375°F (190°C).

8.Lay out the large leaves on a clean surface. If using banana leaves, you may want to briefly pass them over an open flame to make them more pliable.

9.Spoon a generous amount of the rice and mushroom mixture onto the center of each leaf. Fold the sides over the filling and roll them up tightly, securing the ends if necessary.

10.Place the wrapped parcels seam-side down in a baking dish. Cover the dish with foil to keep the moisture in.

11.Bake in the preheated oven for 25-30 minutes until heated through and the flavors meld together.

12.Remove from the oven and let cool for a few minutes before unwrapping. Serve warm, garnished with additional fresh herbs if desired.
