Decadent Double Crust Chocolate Pudding Pie

1.In a large bowl, whisk together the flour, cocoa powder, sugar, and salt for the crust.

2.Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

3.Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

4.Preheat the oven to 375°F (190°C).

5.On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie pan. Transfer the dough to the pan, pressing it gently into the bottom and sides. Trim any excess dough.

6.Roll out the second disc of dough to the same size and set aside.

7.Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5 minutes. Let cool completely.

8.In a medium saucepan, combine the milk, heavy cream, sugar, cornstarch, and salt. Cook over medium heat, whisking constantly, until the mixture begins to thicken and bubble.

9.In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly to temper them.

10.Return the tempered yolks to the saucepan, whisking constantly. Cook for another 2-3 minutes until the pudding is thick and smooth.

11.Remove from heat and stir in the chopped chocolate, butter, and vanilla extract until smooth and fully incorporated.

12.Pour the chocolate pudding into the cooled pie crust. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming. Refrigerate for at least 4 hours or until set.

13.Once the pudding is set, place the second rolled-out crust on top of the pie. Trim and crimp the edges to seal.

14.Bake the pie in the preheated oven for 20-25 minutes, or until the top crust is firm and slightly crisp. Let cool completely before serving.

15.Serve with whipped cream and chocolate shavings, if desired.
