Savory Pesto Egg Muffins with Caramelized Onions

1.Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or line with muffin liners.

2.In a skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Remove from heat and set aside.

3.In a large bowl, crack the eggs and whisk them until well combined. Add the milk, red pesto, sugar, salt, and pepper, and whisk until fully incorporated.

4.Stir in the chopped basil and shredded cheese into the egg mixture.

5.Divide the caramelized onions evenly among the muffin cups, then pour the egg mixture over the onions, filling each cup about 3/4 full.

6.Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top.

7.Allow to cool for a few minutes before removing from the muffin tin. Serve warm or store in the refrigerator for later.
