Crispy Watermelon and Feta Cheese Salad on Toast

1.Preheat your oven to 400°F (200°C).

2.Place the slices of crusty bread on a baking sheet and drizzle with olive oil. Bake in the preheated oven for about 8-10 minutes or until the bread is golden and crispy.

3.While the bread is toasting, prepare the salad. In a large bowl, combine the diced watermelon, crumbled feta cheese, and chopped mint leaves.

4.Drizzle the balsamic glaze over the watermelon and feta mixture, and season with salt and pepper to taste. Gently toss to combine all the ingredients without breaking the watermelon too much.

5.Once the bread is toasted, remove it from the oven and let it cool slightly.

6.To serve, spoon the watermelon and feta salad generously onto each slice of toasted bread. Garnish with additional mint leaves if desired.
