Sewaiya Maggi Delight

1.In a large pot, heat the ghee or butter over medium heat.

2.Add the chopped onions and green chili, sauté until the onions are translucent.

3.Stir in the mixed vegetables and cook for 2-3 minutes until they are slightly tender.

4.Add the sewaiya to the pot and roast for about 3-4 minutes until they turn golden brown, stirring frequently to avoid burning.

5.Pour in 4 cups of water and bring it to a boil.

6.Once boiling, add the Maggi noodles and the masala packets from the noodles.

7.Stir in the turmeric powder, red chili powder, and salt to taste.

8.Cook for about 2 minutes until the noodles are soft and the water is mostly absorbed, stirring occasionally.

9.Remove from heat and let it sit for a minute to thicken slightly.

10.Garnish with fresh coriander leaves before serving.
