Crispy Potato and Sausage Skillet with Pasta

1.In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

2.In the same skillet, add the diced potatoes. Season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

3.Add the sliced sausage to the skillet with the potatoes and cook for an additional 5-7 minutes until the sausage is browned and cooked through.

4.Stir in the diced chicken breasts and cook until they are no longer pink, about 5-6 minutes.

5.Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.

6.While the meat and potatoes are cooking, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

7.Once the onion and garlic are cooked, stir in the tomato pasta sauce, dried oregano, dried basil, and red pepper flakes (if using). Let the sauce simmer for about 5 minutes to combine the flavors.

8.Add the cooked pasta to the skillet, tossing everything together to coat the pasta in the sauce. Cook for an additional 2-3 minutes until heated through.

9.Remove from heat and sprinkle the shredded mozzarella cheese on top. Cover the skillet for a couple of minutes until the cheese is melted.

10.Garnish with the crispy bacon and fresh parsley before serving.
