Mediterranean Sausage and Veggie Bake with Feta

1.Preheat your oven to 400°F (200°C).

2.In a large mixing bowl, combine the sliced Italian sausage, chopped red and yellow bell peppers, sliced zucchini, chopped red onion, halved cherry tomatoes, and minced garlic.

3.Drizzle the olive oil over the mixture and sprinkle with dried oregano, dried thyme, paprika, red pepper flakes, salt, and pepper. Toss everything together until well coated.

4.Transfer the sausage and veggie mixture to a large baking dish, spreading it out evenly.

5.Bake in the preheated oven for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized.

6.Remove the baking dish from the oven and sprinkle the crumbled feta cheese over the top.

7.Return the dish to the oven and bake for an additional 5 minutes, or until the feta is warmed and slightly melted.

8.Remove from the oven and let it cool for a few minutes before serving.
