Ingredients: For the pork ribs; 8 pork belly ribs; 2 tsp ground cumin; ½ tsp ground cinnamon; ½ tsp paprika; ½ tsp grated nutmeg; 2 tsp fennel seeds, chopped or crushed using a pestle and mortar; For the rice; 2 onions, finely chopped; 4 large garlic cloves, crushed; 250 g long-grain rice; 600 ml chicken stock; a few sprigs of oregano or marjoram, chopped; For the beans; 100 g broad beans (podded weight); 30 g butter; 1 tbsp chopped parsley

You can still see the influence of this period on the cooking of Portugal, most noticeably in the use of spices. This is spiced up a bit to incorporate the flavours of Goa and you can see Indian influences in this fiery rib dish
