Savory Chorizo and Hot Dog Sausage Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Add the diced onion and red bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are softened.

3.Stir in the minced garlic and cook for an additional 1 minute until fragrant.

4.Add the chorizo to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until browned and cooked through.

5.Add the sliced hot dog sausages to the skillet and cook for another 3-4 minutes until heated through.

6.Sprinkle in the smoked paprika, cayenne pepper, salt, and pepper. Stir well to combine all the ingredients.

7.Make four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.

8.Once the eggs are cooked, remove the skillet from heat and sprinkle with fresh parsley before serving.
