Plum and Almond Tart Delight

1.In a mixing bowl, combine the flour, cold cubed butter, granulated sugar, and salt. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

2.Add the egg yolk and ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

3.Preheat your oven to 350°F (175°C).

4.On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Carefully transfer it to a 9-inch tart pan, pressing it into the bottom and sides. Trim any excess dough.

5.In a bowl, mix together the almond flour, granulated sugar, softened butter, eggs, vanilla extract, and almond extract until smooth and creamy.

6.Spread the almond cream evenly over the tart crust.

7.Arrange the sliced plums on top of the almond cream in a circular pattern. Sprinkle the brown sugar and sliced almonds over the plums.

8.Bake in the preheated oven for 40-45 minutes, or until the tart is golden and the almond cream is set.

9.Allow the tart to cool for at least 15 minutes before slicing and serving.
