Ocean Breeze Beach Pudding Cups

1.In a medium saucepan, whisk together the sugar, corn starch, and salt until well combined.

2.In a separate bowl, beat the egg yolks and set aside.

3.Gradually add the milk to the dry mixture in the saucepan, whisking constantly to prevent lumps.

4.Place the saucepan over medium heat and cook, stirring frequently, until the mixture thickens and begins to bubble, about 10-15 minutes.

5.Once thickened, remove from heat and stir in the beaten egg yolks, mixing well to combine.

6.Return the saucepan to low heat and cook for an additional 2-3 minutes, stirring continuously.

7.Remove from heat and stir in the vanilla extract and blue food coloring, adjusting the color to your preference.

8.Allow the pudding to cool slightly before transferring it to individual serving cups or bowls.

9.Chill the pudding cups in the refrigerator for at least 2 hours to set properly.

10.Before serving, top each cup with crushed vanilla cookies, a sprinkle of orange zest, and a garnish of additional vanilla cookies and fresh orange slices.
