Grilled Chocolate Waffle Ice Cream Sandwiches

1.Preheat your waffle iron according to the manufacturer's instructions.

2.In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

3.In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.

4.Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix. The batter should be slightly lumpy.

5.Lightly grease the preheated waffle iron with cooking spray or oil. Pour enough batter into the waffle iron to cover the surface (about ½ cup, depending on your waffle iron size). Close the lid and cook for about 4-5 minutes, or until the waffles are cooked through and slightly crispy on the outside. Repeat with the remaining batter.

6.Once all the waffles are cooked, allow them to cool slightly on a wire rack.

7.To assemble the ice cream sandwiches, take one waffle and place a generous scoop of ice cream on top. Top with another waffle to create a sandwich. Repeat with the remaining waffles and ice cream.

8.Drizzle chocolate syrup over the top of each sandwich and then roll the edges in toasted coconut for added texture and flavor.

9.Serve immediately or place in the freezer for about 15 minutes to firm up before serving.
