Savory Hamburger Macaroni Casserole

1.Preheat your oven to 375°F (190°C).

2.Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

3.In a large skillet over medium heat, add the olive oil and sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

4.Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 7-8 minutes. Drain excess fat if necessary.

5.Stir in the diced tomatoes (with their juices), beef broth, salt, black pepper, oregano, and basil. Bring the mixture to a simmer and let it cook for 5 minutes to allow the flavors to meld.

6.Add the cooked macaroni to the skillet and stir to combine with the beef mixture. Remove from heat.

7.Transfer the macaroni and beef mixture into a 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

8.Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

9.Remove from the oven and let it cool for a few minutes. Sprinkle with grated Parmesan cheese and chopped parsley before serving, if desired.
