Fudge-Filled Chocolate Coconut Cookies

1.Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

2.In a large bowl, combine the devil's food cake mix, eggs, vegetable oil, and vanilla extract. Mix until just combined and a thick dough forms.

3.Gently fold in the semi-sweet chocolate chips and shredded coconut until evenly distributed.

4.In a separate medium bowl, prepare the fudge filling. Beat the softened cream cheese until smooth. Add the unsweetened cocoa powder and powdered sugar, mixing until well combined. Stir in the chocolate fudge frosting until the mixture is smooth and spreadable.

5.To assemble the cookies, scoop about 1 tablespoon of cookie dough into your hands and flatten it slightly. Place about 1 teaspoon of the fudge filling in the center.

6.Carefully wrap the cookie dough around the filling, ensuring it is completely enclosed. Roll into a ball.

7.Place the cookie balls about 2 inches apart on the prepared baking sheets.

8.Bake for 10-12 minutes, or until the edges are set and the centers are still slightly soft. Do not overbake.

9.Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
