Sweet Potato Casserole with Pistachio Streusel Topping

1.Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish or an equivalent 3-quart casserole dish.

2.In a large bowl, combine the mashed sweet potatoes, granulated sugar, milk, beaten eggs, melted butter, vanilla extract, cinnamon, nutmeg, and salt.

3.Mix thoroughly until all ingredients are well incorporated and the mixture is smooth. Taste and adjust seasoning if necessary.

4.Pour the sweet potato mixture evenly into the prepared baking dish.

5.Prepare the streusel: In a separate medium bowl, combine the flour and brown sugar. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.

6.Stir in the chopped pistachios until evenly distributed throughout the crumb mixture.

7.Sprinkle the pistachio streusel topping evenly over the sweet potato mixture in the baking dish.

8.Bake the casserole for 35 to 45 minutes, or until the edges are set, the filling is heated through, and the streusel topping is golden brown and crunchy. (Baking time may be slightly longer than the original due to the topping addition).

9.Remove from the oven and let the casserole rest for 10 minutes before serving warm.
