Crispy Mozzarella & Butter Toastie Bites

1.Prepare the Batter: In a medium bowl, whisk together the flour, caster sugar, and salt.

2.In a separate bowl, whisk the egg, almond milk, and 2 tablespoons of melted butter until just combined.

3.Pour the wet ingredients into the dry ingredients and whisk gently until a smooth, slightly thick batter forms. Do not overmix; a few small lumps are acceptable.

4.Prepare the Toasties: Lay the four slices of bread flat. Sprinkle half of the mozzarella evenly over two of the slices.

5.Top the cheese with the remaining two slices of bread to create two sandwiches. Cut each sandwich into four equal small squares (bites), resulting in eight small pieces total.

6.Heat the Cooking Surface: Heat a large non-stick skillet or griddle over medium heat. Add a generous knob of butter (about 1 tablespoon) and allow it to melt and foam slightly.
