Spiced Snickerdoodle Blondies

1.Preheat your oven to 175°C (350°F) and grease a 9x9 inch square baking pan, or line it with parchment paper leaving an overhang on the sides.

2.In a large mixing bowl, whisk together the melted butter, brown sugar, and 1/2 cup granulated sugar until smooth and well combined.

3.Add the eggs and vanilla extract to the butter mixture, beating vigorously until the batter looks glossy and slightly lightened in color.

4.In a separate medium bowl, sift together the flour, cream of tartar, 1 tsp cinnamon, baking soda, and salt.

5.Gradually fold the dry ingredients into the wet ingredients using a spatula, mixing just until no streaks of flour remain; do not overmix.

6.Spread the thick batter evenly into the prepared baking pan, smoothing the top with an offset spatula.

7.In a small bowl, mix the 2 tbsp granulated sugar and 1 1/2 tsp cinnamon for the topping, then sprinkle it generously and evenly over the batter.

8.Bake for 25 to 30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.

9.Allow the blondies to cool completely in the pan on a wire rack before lifting them out and slicing into squares to ensure a chewy texture.
