Savory Spelt Spinach and Feta Stuffed Rolls

1.Add the warm water, olive oil, honey, salt, spelt flour, and yeast into the bread maker pan in the order recommended by your manufacturer. Select the 'Dough' setting and start the cycle.

2.While the dough is proofing, heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the onion until translucent, then add the garlic and spinach. Cook until the spinach is wilted and all moisture has evaporated. Remove from heat.

3.In a mixing bowl, combine the cooled spinach mixture, crumbled feta, toasted pine nuts, nutmeg, salt, and pepper. Mix well and set aside.

4.Once the dough cycle is complete, turn the dough onto a lightly floured surface. Divide it into 8 equal portions and roll each into a small rectangle.

5.Place a generous spoonful of the spinach and feta filling in the center of each rectangle. Fold the edges over to seal the filling tightly, forming a roll or parcel.

6.Place the rolls on a parchment-lined baking sheet, cover with a clean kitchen towel, and let them rest for 20 minutes.

7.Preheat your oven to 200°C. Brush the tops of the rolls with the beaten egg.

8.Bake for 18 to 22 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom. Serve warm.
