Stuffed Pancake Rolls

Prepare the Pancake Batter In a large bowl, whisk together the eggs, flour, milk, salt, and sugar until the batter is smooth and well combined. Set aside.

Cook the Beef Filling In a skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is tender. Drain any excess grease. Add the salt, pepper, and garlic powder to the skillet and stir well to combine. Remove from heat.

Make the Pancake Wraps Heat a lightly greased non-stick skillet over medium heat. Pour about 1/4 cup of the pancake batter onto the skillet and quickly tilt the skillet to spread the batter into a thin, round shape. Cook the pancake for about 2 minutes, or until the edges start to turn golden brown. Flip the pancake and cook for another 1-2 minutes, or until the other side is golden brown. Repeat with the remaining pancake batter.

Assemble the Stuffed Pancake Rolls Place a cooked pancake on a clean work surface. Spoon some of the beef filling onto one side of the pancake and sprinkle with a small amount of shredded cheese. Roll the pancake tightly around the filling, tucking in the sides as you go. Repeat with the remaining pancakes and filling.

Serve Place the stuffed pancake rolls on a serving platter and sprinkle with the remaining shredded cheese. Optional: Garnish with fresh herbs, such as parsley or chives. Serve hot and enjoy!
