Xidoufen

1.Cook the fresh wheat noodles in a large pot of boiling water according to package instructions or until al dente.

2.Once cooked, drain the noodles and rinse them under cold water or shock them in a bowl of ice water to stop the cooking process. Drain well and set aside.

3.In a small bowl, mix together the Sichuan doubanjiang, Chinese black vinegar, light soy sauce, sugar, sesame oil, and white pepper to make the sauce. Set aside.

4.Heat a tablespoon of oil in a skillet over medium heat. Add the ground pork and cook until browned and cooked through. Remove from heat and set aside.

5.In a serving bowl, add the cooked noodles and the sauce. Toss well to coat the noodles evenly.

6.Top the noodles with the cooked ground pork, crushed peanuts, cilantro, green onions, bean sprouts, and pickled mustard greens.

7.Serve the Xidoufen immediately and mix well before eating.
