Braised Beef with Potatoes

Step 1 Heat the vegetable oil in a large pot over medium heat.

Step 2 Add the chopped onion, minced garlic, sliced carrot, and sliced celery to the pot. Cook until the vegetables are softened, about 5 minutes.

Step 3 Add the diced beef to the pot and cook until browned on all sides.

Step 4 Stir in the tomato paste, paprika, and sugar. Cook for 1 minute.

Step 5 Pour in the red wine and beef broth. Add the bay leaf and dried thyme. Season with salt and pepper to taste.

Step 6 Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and cook for 2 hours, or until the beef is tender.

Step 7 Add the cubed potatoes to the pot. Cover and continue to cook for an additional 30 minutes, or until the potatoes are fork-tender.

Step 8 Serve the braised beef with potatoes hot. Enjoy!
