Seafood Cornbread Dressing

Preparation of Cornbread Preheat the oven to 350°F. In a large bowl, combine the crumbled cornbread, diced celery, diced onion, diced bell pepper, minced garlic, chopped parsley, dried thyme, dried sage/tarragon, salt, and black pepper. Mix well. Slowly add the seafood broth and stir until the mixture is moist but not soaked.

Seafood Mixture In a separate bowl, gently fold together the shrimp, lump crabmeat, clam/mussel meat, chopped green onions, chopped parsley, Cajun seasoning, and smoked paprika. Set aside.

Assembly In a baking dish, spread half of the cornbread mixture evenly. Layer the seafood mixture on top of the cornbread mixture. Cover the seafood layer with the remaining cornbread mixture.

4.In a small bowl, whisk together the eggs and seafood broth. Pour the mixture evenly over the cornbread and seafood layers. Cover the baking dish with foil.

Baking Bake in the preheated oven for 45 minutes. Then, uncover the dish and bake for an additional 15 minutes, or until the top is golden brown and the dressing is set.
