Mango Cake with Farofa, Lettuce, and Pineapple

Cake Preparation Preheat the oven to 180°C. Grease and flour a cake pan. In a bowl, mix the flour, baking powder, baking soda, and salt. In another bowl, whisk together the sugar, eggs, mango puree, oil, and vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until well combined. Pour the batter into the prepared pan.

Farofa Topping In a mixing bowl, combine the cassava flour, sugar, and cinnamon. Rub in the butter until the mixture resembles coarse crumbs. Stir in the chopped walnuts. Sprinkle the farofa topping over the cake batter.

Baking Bake the cake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Assembly Once the cake has cooled, arrange the pineapple slices and lettuce leaves on top for garnish. Serve the mango cake with a tropical twist and enjoy!
