Mixing the Main Ingredients In a large bowl, combine the raisins, currants, chopped prunes, chopped almonds, chopped candied peel, breadcrumbs, suet, dark brown sugar, flour, nutmeg, cinnamon, cloves, and salt. Mix well to combine.

Preparing the Egg Mixture In a separate bowl, beat the eggs and then add the stout or dark beer, dark rum, and brandy. Mix thoroughly.

Combining the Mixtures and Soaking the Fruits Pour the egg mixture over the dry ingredients and mix until everything is well combined. Cover the bowl and let the mixture sit for at least 24 hours to allow the flavors to develop, stirring it occasionally.

Preparing the Pudding Basins After the soaking period, grease a pudding basin and pack the pudding mixture into it. Cover the pudding with a double layer of greased parchment paper and foil, securing it tightly with a string.

Steaming the Pudding Place the pudding basin in a large pot and add enough water to reach halfway up the side of the basin. Cover the pot with a lid and steam the pudding for 6 hours, adding more water as necessary to maintain the water level.

Cooling and Maturing the Pudding Once steamed, remove the pudding from the pot and let it cool completely. Store the pudding in a cool, dark place for at least a week before serving so that the flavors can mature.
