Georgian Lamb Soup (Харчо из баранины)

Preparing the Ingredients 1. Chop the onion, slice the carrots, dice the bell pepper, mince the garlic cloves, and cube the lamb meat.

Cooking the Lamb Soup 2. In a large pot, brown the lamb meat over medium heat until nicely seared. Add the chopped onion, sliced carrots, diced bell pepper, and minced garlic. Cook until vegetables are tender.

3.Stir in the diced tomatoes, tomato paste, paprika, ground coriander, cayenne pepper, salt, and pepper. Cook for a few minutes to allow the flavors to meld.

4.Add the rice and beef broth to the pot. Bring the soup to a boil, then reduce the heat and simmer until the rice is cooked and the meat is tender, about 20-25 minutes.

5.Adjust the seasoning if needed, and remove the pot from heat.
