Caramel Apple Mousse

1.Peel, core, and chop the apples into small pieces.

2.In a saucepan, combine the chopped apples, sugar, and water. Cook over medium heat until the apples are soft and caramelized, stirring occasionally. This will take about 15-20 minutes.

3.Remove the caramelized apples from heat and let them cool.

4.In a separate bowl, whip the heavy cream until stiff peaks form. Add powdered sugar, vanilla extract, cinnamon, and nutmeg. Mix until well combined.

5.In a small bowl, sprinkle the gelatin over cold water and let it bloom for a few minutes. Then, microwave the gelatin mixture for 10 seconds until it dissolves completely.

6.Fold the gelatin mixture into the whipped cream mixture.

7.Gently fold in the cooled caramelized apples into the cream mixture.

8.Divide the mousse into serving glasses and refrigerate for at least 2 hours to set.

9.Before serving, drizzle caramel sauce over the mousse and top with a dollop of whipped cream and caramelized apple slices.
