Delicious Motichoor Ladoo

1.In a large mixing bowl, combine the besan and baking soda. Gradually add water to form a smooth batter, ensuring there are no lumps. The batter should be of pouring consistency.

2.Heat ghee in a deep frying pan over medium heat. Once hot, pour the batter through a perforated ladle or sieve to create small droplets (boondis) in the hot ghee. Fry until they turn golden brown, then remove and drain on paper towels.

3.In a separate pot, combine sugar and water. Heat until the sugar dissolves completely, then add saffron strands and cardamom powder. Boil the syrup until it reaches a one-string consistency.

4.Add the fried boondis to the sugar syrup and mix well. Allow the mixture to cool slightly, then add lemon juice and chopped nuts. If the mixture is too dry, add a little milk to help bind it together.

5.Once the mixture is cool enough to handle, grease your palms with ghee and take small portions of the mixture to shape into round ladoos. Repeat until all the mixture is shaped into ladoos.

6.Let the ladoos cool completely on a plate before serving. Store in an airtight container.
